Pickled Fish
For 1 Kg of sardines or mackerel.
Ingredients
Fish – 1 kg
Oil – 1 cup
Vinegar – 1 cup
Ginger – 1 inch piece minced
Garlic - 8-10 cloves minced
Green Chillies slit – 7-8
Chilli powder as required
Turmeric powder – 1 tsp
Sugar – 1 tsp
Salt to taste
Curry leaves
Procedure
After cleaning the fish, see that all the water has drained out. Marinate the fish with the chilli powder, turmeric, green chillies, ginger, garlic, curry leaves, salt, sugar, ½ cup vinegar for some time. In a cooker pour 1 cup oil & put the marinated fish into it, add the rest of the vinegar & mix well. Put the cooker on the fire with the lid on. When the steam starts coming, put the weight on. After the first whistle lower it to the minimum. Cook for at least 40 minutes. Put off the flame. After the pressure has gone, check that the bones of the fish have cooked. If there is any liquid, put it back on the flame (with lid open) on low heat to allow the water to dry. The oil should be clear. Some of the oil can be removed after cooking (& re-used for frying fish etc.)
