Lemon Souffle

Ingredients

2 Lemons
3 Eggs - separated
1/2 cup Sugar
2 tsp Gelatine
1/2 tin Condensed Milk

Method

Squeeze the lemons
Grate Rind of 1 lemon
Place Juice, rind, Egg Yolks and Sugar in a dish over a pan of hot water and beat till creamy

Soften the Gelatine in 1/2 cup Hot Water.
Add the Lemon mixture, alternating with Condensed Milk and beat till creamy.

Beat Egg whites till very stiff and genty fold into the mixture
Pour into a dish and allow to set in the freezer.
