Black Eyed peas with coconut milk

Ingredients
1 cup black-eyed peas, soaked overnight
1 onion, chopped
2-3 cloves garlic chopped
1" ginger chopped
1-2 tsp chilli powder as per taste
1 small tomato chopped
1 tbsp cilantro leaves chopped
1/2 tsp coriander seeds
1/2 tsp cumin seeds
1/2 tsp turmeric
little tamarind soaked
1/2 cup coconut milk
little sugar (optional)

Method

Heat oil in pan. Add onions, fry a little. Add ginger and garlic. Fry till golden. Grind coriander and cumin seeds finely. Add turmeric, chilli powder, coriander and cumin powder and fry a little. Add tomatoes and fry well. Add tamarind water, dash of sugar if using and cook a little. Add the peas and salt. Simmer together. Stir in coconut milk. Simmer till flavours have blended. Add coriander leaves.
